Lemon Delight
2 tablespoons butter
3/4 cup milk
1 lemon, juice and rind
2 eggs
2 tablespoons flour
1/2 cup sugar
Cream butter and sugar. Add wellbeaten egg yolks, milk, juice and rind.
Fold in beaten egg whites. Pour in greased casserole, set in larger pan of hot water. Bake at 350° for 45 minutes. Serve with whipped cream, if desired. Serves 4, but can be doubled.
