Spice Muffins
2 cups sifted flour
3 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
1 teaspoon ginger
1 egg
1 cup milk
1 teaspoon vanilla extract
3 tablespoons melted shortening
Combine flour with dry ingredients. Beat
egg lightly; stir in milk, vanilla and
melted shortening. Add to dry ingredients;
mix until just moistened. Spoon
into muffin tins (either greased or using
paper muffin cups) and bake at 425° for
20 to 25 minutes.Makes 12 muffins.
